I love how versatile this recipe is. Once you have your chocolate mousse bars you can add different toppings. You can add almond slices (as I did in the pictures) or you can drizzle chocolate or white chocolate. You can sprinkle chocolate chips on the top, or even whipped cream can be a good match.

Ingredients
The good thing about this recipe is that it contains just a few ingredients… 7 ingredients. Which is amazing for a fancy dessert like this. The ingredients are simple and they are easy to find in every supermarket.
Look, I love to make all this deliciousness but I use the simplest and cheapest ingredients. We don’t have all the money to have on the table some expensive brands. The cheap one (which in my case, is Walmart right now) does the same job. Believe me.
For The Crust
I just use 2 ingredients here. Some people add sugar here but for my taste… I just leave it out.
- Graham Crackers – I used Honey Graham Crackers from Walmart, which are slightly sweet enough to leave out the sugar in whole. But even, if I have the classic one, personally I wouldn’t add sugar to the crust. There is enough sugar in the filling for me.
- Unsalted Butter – It’s ok to use Salted Butter in the crust. But if you do your crust like me, without sugar, I recommend using unsalted butter, so it’s not going to be a saltish crust for your chocolate mousse.
For The Filling
This is the “heaven” for me. When I made this for the first time I was skeptical because usually when I make a no-bake dessert usually needs gelatin to make it thick and hard. But this one didn’t. But the heavy cream makes it possible to have a perfectly stable filling.
- Heavy Cream – This is one of the most crucial ingredients. This will make the filling fluffy and mousy. You can’t substitute the ingredient for this recipe.
- Semisweet Chocolate – It’s a versatile recipe, so you can add dark chocolate or even white chocolate. You can also use chocolate chips for this (as I did) since you have to melt the chocolate anyways.
- Espresso Coffee – This gives the “x factor” to the recipe. Chocolate mixed with coffee? The flavor will be mouthwatering.
- Vanilla Extract – A little hint of vanilla just helps the filling’s flavor to come together.
- Salt – just a pinch for a better flavor.
How To Make No-Bake Chocolate Mousse Bars
It has really simple step-by-step instructions to follow. I demonstrate them with pictures to make them easier for you.
The Crust
- Place parchment paper in a 9 X 13 baking pan.
- In the Food Processor, process the graham crackers until you have crumbs. Then add the melted butter and pulse until evenly moistened.
- Add the crumbs into the prepared baking pan and press them down into an even layer on the bottom.
- Place it in the freezer until you finish with the filling.
The Filling
- Set the Chocolate in a medium mixing bowl.
- In a small saucepan, heat 1 cup of cream, espresso powder, and salt until hot but not boiling.
- Pour the hot cream mixture over the chocolate then add the vanilla and whisk until smooth.
- Set in the refrigerator to cool completely.
- In a large bowl whip the remaining 2 cups of heavy cream until you have stiff peaks.
- When the chocolate cooled down add it to the mixture and gently fold to combine.
- Pour the mixture over the crust, and spread it out into an even layer.
- Cover with plastic wrap and chill until firm, at least 4 hours.
- Cut into squares, and if you desire top them with toppings. (I used almond slices.)
Tips For You
- When it’s ready to be cut into bars soak the big knife with hot water for 5 to 10 seconds. Then dry it quickly with a bounty. Cut the chocolate mousse with care. Like this, you’ll have beautifully cut bars.
- The plastic wrap on the mousse helps to congeal faster and more nicely. I recommend using it.
It’s a very easy recipe with some tricks here and there, but if you follow the instructions you’ll not going to fail.
