Just in 20 minutes, you’ll have a delicious No Bake Chocolate Mousse Bars, that is simple and easy to make. You don’t even need to turn on your oven for this treat. You’ll be surprised that with just these few ingredients, you can really get a melt-in-your-mouth chocolaty snack.

no bake chocolate mousse bars

No bake, no difficult instructions, and no fail even if this will be your first time making it. Are you a chocolate lover or an easy-to-make dessert fan? Or simply it is summertime and you prefer not to turn the oven on, but still, you want to enjoy a delicious treat?

According to research, only in the US 81% of the population loves chocolate, and 50% cannot live without it every day. Are you a chocolate lover? Are you with the majority of the people who love it? I’m sure, I am. I am not an everyday eater but if I have to choose from a chocolate or another flavor? Chocolate wins. All the time.

If you look around my blog, it can prove my love for chocolate. For example Hot Chocolate Mug Cake, Chocolate Raspberry Mousse, or Edible Brownie Batter…and these are just a few. This No Bake Chocolate Mousse Bars will be another addition to my catalog. Which will be a favorite! Promise you!

Other chocolaty treats that are a must to try, are the Classic Chocolate Mousse and Hungarian Chocolate Mousse Cake (Rigó Jancsi)

Why you’ll love this no-bake dessert?

  • no-bake (which means, no oven necessary on the hot summer days, yay!)
  • easy to make
  • quick to make
  • if you love chocolate, it’s a must to try
  • it may cause obsession
  • kid’s friendly
  • versatile chocolate mousse bars
  • no eggs in the recipe

I love how versatile this recipe is. Once you have your chocolate mousse bars you can add different toppings. You can add almond slices (as I did in the pictures) or you can drizzle chocolate or white chocolate. You can sprinkle chocolate chips on the top, or even whipped cream can be a good match.

Feel free to experience and go after your mouth-buds, whatever you like, or whatever you have apparently in your pantry.

Ingredients

The good thing about this recipe is that it contains just a few ingredients… 7 ingredients. Which is amazing for a fancy dessert like this. The ingredients are simple and they are easy to find in every supermarket.

ingredients for the chocolate mousse

Look, I love to make all this deliciousness but I use the simplest and cheapest ingredients. We don’t have all the money to have on the table some expensive brands. The cheap one (which in my case, is Walmart right now) does the same job. Believe me.

For The Crust

I just use 2 ingredients here. Some people add sugar here but for my taste… I just leave it out.

  • Graham Crackers – I used Honey Graham Crackers from Walmart, which are slightly sweet enough to leave out the sugar in whole. But even, if I have the classic one, personally I wouldn’t add sugar to the crust. There is enough sugar in the filling for me.
  • Unsalted Butter – It’s ok to use Salted Butter in the crust. But if you do your crust like me, without sugar, I recommend using unsalted butter, so it’s not going to be a saltish crust for your chocolate mousse.

For The Filling

This is the “heaven” for me. When I made this for the first time I was skeptical because usually when I make a no-bake dessert usually needs gelatin to make it thick and hard. But this one didn’t. But the heavy cream makes it possible to have a perfectly stable filling.

  • Heavy Cream – This is one of the most crucial ingredients. This will make the filling fluffy and mousy. You can’t substitute the ingredient for this recipe.
  • Semisweet Chocolate – It’s a versatile recipe, so you can add dark chocolate or even white chocolate. You can also use chocolate chips for this (as I did) since you have to melt the chocolate anyways.
  • Espresso Coffee – This gives the “x factor” to the recipe. Chocolate mixed with coffee? The flavor will be mouthwatering.
  • Vanilla Extract – A little hint of vanilla just helps the filling’s flavor to come together.
  • Salt – just a pinch for a better flavor.

How To Make No-Bake Chocolate Mousse Bars

It has really simple step-by-step instructions to follow. I demonstrate them with pictures to make them easier for you.

The Crust

prep of the bottom of the chocolate bars
  1. Place parchment paper in a 9 X 13 baking pan.
  2. In the Food Processor, process the graham crackers until you have crumbs. Then add the melted butter and pulse until evenly moistened.
  3. Add the crumbs into the prepared baking pan and press them down into an even layer on the bottom.
  4. Place it in the freezer until you finish with the filling.

The Filling

prep of the chocolate mousse cream
  1. Set the Chocolate in a medium mixing bowl.
  2. In a small saucepan, heat 1 cup of cream, espresso powder, and salt until hot but not boiling.
  3. Pour the hot cream mixture over the chocolate then add the vanilla and whisk until smooth.
  4. Set in the refrigerator to cool completely.
  5. In a large bowl whip the remaining 2 cups of heavy cream until you have stiff peaks.
  6. When the chocolate cooled down add it to the mixture and gently fold to combine.
preparation of the chocolate mousse bars
  1. Pour the mixture over the crust, and spread it out into an even layer.
  2. Cover with plastic wrap and chill until firm, at least 4 hours.
  3. Cut into squares, and if you desire top them with toppings. (I used almond slices.)

Tips For You

  1. When it’s ready to be cut into bars soak the big knife with hot water for 5 to 10 seconds. Then dry it quickly with a bounty. Cut the chocolate mousse with care. Like this, you’ll have beautifully cut bars.
  2. The plastic wrap on the mousse helps to congeal faster and more nicely. I recommend using it.

It’s a very easy recipe with some tricks here and there, but if you follow the instructions you’ll not going to fail.

Our kitchen does not have air conditioning, so using the oven is off-limits during the summer months. I love how this easy recipe is no-bake and also decadent and delicious!

Made this chocolate bar to use up leftover crackers. But I mixed the semi sweet chocolate with milk chocolate as my kids are not keen on a strong chocolate taste. It went so well that I now have to make it again on request.
