This original Rafferty’s Famous Potato Soup is topped with cheese, chives, and chopped bacon and is perfect for our starter.
Here’s what you need for this soup
- Yellow Potatoes – One of the essential ingredients. Important to know that originally the Rafferty’s makes their potato soup with the skin on. Clean the ski roughly as much as you can, but leave the skin on.
- White Onion
- Milk
- Cream Cheese
- Butter – for substitute margarine is perfect too.
- Cream Of Mushroom
- Celery Soup
- Seasoning: garlic powder, salt, and pepper
- For Garnish: shredded cheddar, bacon bits, and chives for topping

- In a large soup pan, leave the skin on and cube them, then cook the potatoes and the diced onion in water on medium heat until tender.
- When done, strain the potatoes and onions of excess water.
- Add the milk and cream cheese.
- Remove from heat and stir until the cream cheese is melted. Add the soups, butter, and garlic powder.
- When the soup is ready to serve, top it with shredded cheese, bacon bits, and/or chives. These are optional.
