The copycat Juan Pollo Potato Salad recipe is one of my favorite side dishes when I go out to the Juan Pollo Restaurant. I love it so much that I also recreated it in my kitchen. So when I crave a little “Juan Pollo” food, this is one of them that I can make.

Juan Pollo Potato Salad recipe doesn’t seem different than the other popular potato salad recipes, but there are some “secret ingredients” that make it unique. Delicious, moist and it has a “never enough” feeling. I can promise you that.
Here’s what you need for this:
- four large white potatoes
- one boiled carrot
- half crunchy white onion
- parsley to taste
- pinch of salt and black pepper
- creamy mayonnaise
- one cup of heavy cream
- two tablespoons of white vinegar
As mentioned, there are not a lot of elements going on here, but if you stick with these ingredients, it will come out super delicious.
This is not the same potato salad that my mom usually did. She liked to put as many things in her salad as she found in her pantry.
Well, the Juan Pollo Potato Salad recipe is known not to over-add ingredients in it, but as simple as it is, makes it super moist and absolutely delicious.
How to make the Juan Pollo Potato Salad Recipe
- In a medium pot, peel, and wash, the potatoes and the carrot. Then boil them together. Let the boiled potatoes and the carrot cool for a few minutes before cutting them. [Picture 1]
- After the potato has been cut into little cubes and the carrots have been grated, take a bowl, and mix the chopped onion with parsley, mayonnaise, salt, pepper, heavy cream, and vinegar. [Pictures 2-3]
- Mix them well and enjoy.

my friend’s grandma put some herb like tyme in it that made all the difference. She was a great cook. Maybe a hard boiled egg in it too but Juan Pollo had the best I almost ever tasted. Maybe it’s just the parsley that gives it the distinctive flavor.

how long do you boil the potatoe and carrot?

Whole large potatoes has to be boiled about 15 – 20 minutes, depending on their size; and whole carrots should be boiled about 10 – 15 minutes, depending on their size. When you think their are done, you can stick a fork in some of the potatoes and carrots to make sure they are boiled.
