It's perfect for cookouts, potlucks, or these weeknights when comfort food is calling. It doesn't seem different than the classic popular potato salads out there, but there are some "secret ingredients" that make it unique. Delicious, mouthwatering, and it has a "never enough" feeling. I can promise you that.

What is Juan Pollo?

Juan Pollo is a beloved California-based chain known for its Mexican-style rotisserie chicken. The menu is simple but satisfying: chicken, rice, beans, salsa - and of course, the potato salad.

Unlike traditional Mexican sides, their potato salad stands out for its American diner vibes, yet with a flavor twist that feels right at home next to salsa and tortillas.

After countless tastings and tests, this recipe gets as close as you can get without "knowing" the true secret formula.

Why You'll Love This

This isn't your average deli counter potato salad. The Juan Pollo version has a light, whipped texture, just the right balance of soft potatoes, crunchy carrots, and savory extras. Here's what makes this version a keeper:

  • Super creamy and overly chunky (not smooth like mashed potatoes)
  • Tangy, and just a hint of seasoning
  • Simple ingredients (nothing fancy, but everything works in harmony)
  • Perfectly chilled
  • It's a nostalgic comfort food
  • Great make-ahead option
  • Customizable for your taste
  • Kid- and crowd-friendly
  • Budget-friendly ingredients
  • Pairs with everything

This potato salad isn't just a side dish - it's a versatile star that complements all kinds of main courses, especially anything grilled, roasted, or smoky. Examples, like BBQ Beef Ribs, Roasted Chicken Drumsticks, and even Tacos or Burritos.

Here's what you need

Here's what you'll need to whip up a big bowl of Juan Pollo-style potato salad:

  • Russet Potatoes
  • Raw Carrot
  • Green Onion
  • Black Olive
  • Pinch of Salt and Black Pepper
  • Creamy Mayonnaise

As mentioned, there are not a lot of elements going on here, but if you stick with these ingredients, it will come out super delicious. This is not the potato salad that I usually make. But when I go to Juan Pollo, this is my side I order, and I was excited to recreate it.

How to Make the Juan Pollo-Style Potato Salad

Ready to recreate that irresistible creamy classic? Here's how to bring it all together:

Place potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook them until just fork-tender.

Drain the potatoes well, then return them to the pot. With a potato masher, start smashing them until you have a thick and chunkier texture. (not smooth like mashed potatoes.)

Add the grated raw carrots, chopped green onions, and the chopped black olives, mayonnaise, salt, and pepper, to the potatoes, and gently fold everything together until well-coated. Chop the black olives and green onions as small or large as you prefer.

Chill the potato salad for at least 2 hours or overnight before serving. Serve cold alongside rotisserie chicken or grilled meats.

Common Questions

Does this really taste like Juan Pollo's? It's as close as you can get without their actual recipe. The mayo and te soft-mashed method captures that signature smooth texture and tangy flavor.

How long does it last in the fridge? This salad keeps well for about 4 days in an airtight container. In fact, it gets better after a day! To freeze it's not recommended!

Can I make this ahead of time? Absolutely... and you should! The flavor improves after chilling. Just give it a gentle stir before serving.

Can I make it vegan? Yes! Use vegan mayonnaise.

Why do you partially mash the potatoes? Mashing half the potatoes gives the salad its signature smooth, whipped texture, just like Juan Pollo's version. The remaining chunks give it body, so it doesn't feel like mashed potatoes.

How do I keep it from getting watery? Make sure your potatoes are fully drained. Also, avoid overmixing, which can break down the potatoes too much and release extra moisture.

Notes

  1. Keep It Simple: Juan Pollo’s salad is known for its minimal ingredients and clean flavor—avoid overloading it with onions (yellow or red), celery, or spices. Stick to mayo for authenticity.
  2. Potato Choice: Russet potatoes work best for this recipe. They break down slightly when mixed, creating that creamy, almost whipped texture like the original.
  3. Don't wait until the potatoes are cooled down. The cooler it is, the harder it is to get the right texture.
  4. Chill Time Matters: This salad tastes best after at least 2 hours in the fridge. Overnight is even better—this allows the flavors to fully develop and the texture to set.
  5. Texture Tip: Don’t overmix. Fold gently to avoid mashing the potatoes too much. Some breakage is fine and actually helps create that soft, creamy texture Juan Pollo fans love.
  6. Storage: Store in the fridge in an airtight container for up to 3–4 days. Not recommended for freezing.

If I want to make a larger serving, do I just double the recipe? I only ask since some recipes do not work that way.

    Thank you

my friend's grandma put some herb like tyme in it that made all the difference. She was a great cook. Maybe a hard boiled egg in it too but Juan Pollo had the best I almost ever tasted. Maybe it's just the parsley that gives it the distinctive flavor.

    1. Hi Alison,

Whole large potatoes has to be boiled about 15 - 20 minutes, depending on their size; and whole carrots should be boiled about 10 - 15 minutes, depending on their size. When you think their are done, you can stick a fork in some of the potatoes and carrots to make sure they are boiled.

      Hope this helped!

The addition of vinegar here was a perfect counter to the creaminess. I loved it! Will definitely make again.
