Busy Day Soup Recipe is one of the easiest soups to make and it’s ready just in a total of 45 minutes. So easy to put all the ingredients together, and you don’t have to prepare anything. Straight in the pot and you’ll have a delicious and warm soup.

Agh, those busy days! I have a toddler… and I think a said everything. My days can go crazy just in a second so I have to be ready for anything. For every tantrum, for every question ( which there is one in every minute, literally), for the mess…and the list goes on.

My son learns how to talk now, so he is coming to me with every toy that he has, and every flashcard one by one and telling the words to me, and will wait until I repeat them after him, sometimes he makes me say the world a couple of times.

I love him to death, but god… where is my break? Well, this is the mommy life… So there is no complaint. But it happens when the clock goes around and you realize too late there is no food on the table.

Then, this Busy Day Soup recipe comes to save your life and from your husband’s complaint.

Easy Ingredients

  • Take out 1 lb of ground beef from your fridge,
  • and the frozen vegetables, (which can be corn, carrots, green peppers, celery, or green beans)
  • 1 can of diced tomatoes,
  • 4 cups of Vegetables Broth, which can be substituted with Beef broth.
  • 1 packet of Onion mix seasoning
  • 1 tablespoon of olive oil, preferably an extra virgin, but as a substitute you can use any kind of oil.
  • And pasta ( I used Ditalini pasta, but you can use such as Elbow, Macaroni, Rotelle, Gobetti, Gemelli, Orecchiette, or Stelle). You have a lot to choose from.

In case you don’t have Onion Mix Seasoning at home, easily you can make it in 2 minutes. This is what you need:

  • 1 tsp Beef Bouillon
  • 1 tsp Minced Onion
  • 1 tsp Onion Powder
  • 1 tsp Paprika powder
  • 1 tsp Parsley
  • 1 tsp Black Pepper
  • 1 tsp Celery Powder

Let’s Prepare Our Busy Day Soup Recipe

  1. Heat olive oil in a large pot. Add ground beef and cook, crumbling with a spoon, until the beef is cooked through and there is no longer any pink. Sprinkle onion soup over beef and stir.
  2.  Stir in broth, tomatoes, and frozen vegetables. Bring to a boil.
  3. Add pasta; boil for 10 minutes.
  4. Remove from heat and serve. 

How do you keep soup fresh in the fridge?

Make sure you cool down the soup. Then, put it in a container with a lid and you can store it and keep it fresh for 3-4 days. After it cools down totally, the pasta will soak up the liquid, so when you want to warm it up you can add 2 cups of water to make it thinner.

Can you freeze soup after 3 days?

If you plan to freeze the soup, it is better to freeze it the same day to eliminate the risk of food poisoning. But you can add it to the freezer no later than 3 days.

How do I know if my soup is spoiled?

If your soup tastes sour, that is a sign your soup is sour. If you have a feeling your soup is sour, it is better not to taste it. You want to sniff it instead.

        I added approximately 1 1/2 – 2 cups of pasta. Sorry, for the inconvenience. I didn’t even realize I didn’t mention it.
