Limes Vinaigrette

Instructions
 

Prepare and season the vegetables

  • Peel the golden beets and carrots. Cut the beets into evenly sized parts (about 6-8 parts) and leave the carrots whole (trim only the tops and ends if needed). Keeping the carrots whole creates a beautiful presentation and allows them to become tender while lightly caramelizing in the air fryer.

  • Place the cubed beets and whole carrots in a large bowl. Drizzle with the olive oil and season with the salt and black pepper. Toss until the vegetables are evenly coated.

Air-Fry the vegetables

  • Arrange the beets and whole carrots in a single layer in the air fryer basket, making sure not to overcrowd them.
