With all the tropical ingredients this chicken will be a winner. Not to mention, for the grill and bbq lovers it will be a jackpot. Honestly, I made my chicken (in the picture) with an "inside" grill. I wasn't doing it outside. The taste was so...tropical. The look, well not bad. Probably grilled with a backyard grill would look more golden and crispy on the outside.

Ingredients for the Pollo Tropical Chicken Recipe

First, make the marinade for the chicken which will give you the "tropical vibe". It will feel more authentic if you use fresh orange juice, pineapple juice, and lemon juice.

Marinade

Use fresh orange, pineapple, and lemon (or lime also good) juice. Add all the dry ingredients to the juice mixture or rub spices over the chicken until nicely and evenly coated.

It is best if you rested for 4 hours in your fridge. But if you really are in hurry, add it to your fridge for 20 minutes.

Instruction Step by Step

  1. Clean the chicken, take out the bones and take off the skin. Slice them for your taste.
  2. In a small bowl combine all ingredients. Add garlic, cumin, salt, black pepper, and oregano. Mix well.
  3. Sprinkle spice mixture over chicken pieces. Rub spices over chicken until well and evenly coated.
  4. Pour orange juice and pineapple juice into a large dish. Add the chicken pieces into it.
  5. Rest them in the fridge for at least 4 hours. ( In an emergency you can leave it for at least 20 minutes.)
  6. Straight from the large dish take them out, allow excess to drip off, and place chicken on the grill.
  7. Brush chicken with the marinade every minute, until done.
  8. Grill chicken on each side for 5 minutes or until done.

  • 2 pounds Chicken Breast Skinless, Boneless
  • 1 cup Orange Juice
  • 1 cup Pineapple Juice
  • cup Lemon Juice
  • 1 tablespoon garlic powder or fresh garlic mashed into a paste
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ tsp black pepper
  • 1 teaspoon oregano
  • 1 tablespoon fresh Cilantro

    The citrus in this is so refreshing and the chicken comes out super juicy! A great summer meal to enjoy outside.

    Oh I love all the citrus flavors in the marinade for such great flavor. Will definitely try the lime next time and I think I will do kabobs.
