Strawberry Cheesecake Cookies

Ingredients
  

  • 2 sticks Salted Butter (1 cup)
  • ¾ cup white sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¼ tsp salt
  • cups all-purpose flour
  • 1 cup fresh strawberries

Cream Cheese Filling

  • ¾ cup cream cheese
  • ¼ cup powdered sugar

Instructions
 

  • In a small bowl mix the cream cheese with powdered sugar until smooth and combined.
  • Place 10 teaspoons of cream cheese on the baking sheet. Freeze for 30 minutes, or until almost completely solid.
  • Whisk together flour, salt, and baking soda then set aside.
  • In a bowl, beat the butter and sugars together with a hand mixer, until light and fluffy (about 1-2 minutes). Mix in the egg, egg yolk, and vanilla extract.
  • Add in the flour, salt, and baking soda, and mix until just combined. (Make sure you don't over-mix it.)
  • Dice the strawberries and gently fold them in.
  • Scoop 12 heaping tablespoons of dough onto the baking sheet. They should be slightly big (approximately they'd be about 2 tbsp-sized).
  • Press the back of a teaspoon into the top of the balls of dough to create an indent.
  • Remove the cream cheese filling from the freezer and place one into each of the cookies.
  • Make the cookie dough a ball with a cheesecake inside. Will be harder to work with, because of the strawberries, but just do it. It doesn't have to be perfect.
  • Refrigerate the prepared cookie dough balls for at least 15-20 minutes, and bake them for 13-16 minutes in a preheated oven at 350°F. It has to be slightly golden brown and the tops set.
  • After removing them from the oven, cool them down, then enjoy.
