Chocolate Raspberry Mousse

This Chocolate Raspberry Mousse is a classic French dessert, that it'll make happy all chocolate lovers. So rich and fluffy, yet light and creamy with a taste of raspberry. Just with a few ingredients you can make a restaurant-style dessert.

Ingredients
  

  • ½ envelope unflavored gelatin
  • 2 tbsp cold water
  • ¼ cup boiling water
  • 1 cup white sugar
  • ½ cup cocoa powder
  • 4 cups cold whipping cream
  • 1 tbsp vanilla extract

Raspberry Jelly Topping

  • 1 cup raspberries + for decorations
  • 2 tbsp lemon juice
  • 6 tbsp white sugar
  • ½ envelope unflavored gelatin
  • 2 tbsp water

Instructions
 

  • Sprinkle gelatin over cold water in a small bowl. Let stand for 2 minutes to soften.
  • Add boiling water. Stir until the gelatin is completely dissolved and the mixture is clear. Cool slightly.
  • Mix sugar and cocoa in a large bowl. Add whipping cream and vanilla extract.
  • Beat on medium speed of mixer, scraping the bottom of bowl occasionally, until mixture is stiff.
  • Pour in the gelatin mixture and beat until well blended.
  • Spoon into dessert dishes and refrigerate at least 30 minutes before adding the raspberry jelly toppings.

Raspberry Jelly Topping

  • Add raspberry and lemon juice in a blender. Make a raspberry sauce at high speed for 1 minute, or until is well blended.
  • Place the raspberry sauce in a non-stick small pan, add the sugar, and start cooking.
  • Meanwhile, sprinkle gelatin over the 2 tablespoons of water in a small cup. Stir until the gelatin is completely dissolved.
  • Add the gelatine mixture to the sauce and cook it for 10 minutes or until starts to thicken. Stir occasionally.
  • Let cool down before you place it on top of the chocolate mousse.
  • Then add raspberry topping on top of the chocolate mousse. Let it sit for 15 more minutes before serving.
  • Garnish with strawberry, and chocolate pieces, or with a teaspoon of whipping cream.
