Ingredients
  

  • 2 Chicken Breast (1-2 lbs.)
  • 3 cups egg noodles
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 1 large onion
  • 3 celery stalks
  • 4 carrots
  • 10 cup water or more
  • 2 chicken bouillon cubes
  • 2 tbsp chicken bouillon powder
  • 2 bay leaves
  • 3 tbsp fresh parsley
  • ¼ tsp salt to taste
  • ¼ tsp pepper to taste

Instructions
 

  • Slice the onion and the three garlic cloves. Chop all the celery stalks and the large carrots.
  • In a large soup pot, heat the 3 tbsp olive oil. Garlic, onions, celery, and carrots are added along with a pinch of salt and pepper. Cook until soft.
  • Then add two chicken bouillon cubes, two bay leaves, and four tablespoons of parsley to the pot.
  • Fill the soup pan with 10 cups of water and add the chicken breasts (ensure that the water covers the whole chicken breasts). Boil the soup.
  • Once the soup has boiled, reduce the heat to low and simmer for 1 hour. When the chicken breasts are fully cooked, remove them from the pan and allow it to cool to the touch.
  • While our soup is on simmer, let's make our egg noodles. Put 4-5 cups of water to boil, add a pinch of salt then add the egg noodles to the water. After 10 minutes (or until the egg noodles are done) rinse them and leave them in a separate pot until the soup is ready.
  • Shredded the chicken into little pieces and put them back in the soup.
  • When the soup is done add the egg noodles to the soup and simmer them for 5 minutes, on low heat.
