Slice the onion and the three garlic cloves. Chop all the celery stalks and the large carrots.
In a large soup pot, heat the 3 tbsp olive oil. Garlic, onions, celery, and carrots are added along with a pinch of salt and pepper. Cook until soft.
Then add two chicken bouillon cubes, two bay leaves, and four tablespoons of parsley to the pot.
Fill the soup pan with 10 cups of water and add the chicken breasts (ensure that the water covers the whole chicken breasts). Boil the soup.
Once the soup has boiled, reduce the heat to low and simmer for 1 hour. When the chicken breasts are fully cooked, remove them from the pan and allow it to cool to the touch.
While our soup is on simmer, let's make our egg noodles. Put 4-5 cups of water to boil, add a pinch of salt then add the egg noodles to the water. After 10 minutes (or until the egg noodles are done) rinse them and leave them in a separate pot until the soup is ready.
Shredded the chicken into little pieces and put them back in the soup.
When the soup is done add the egg noodles to the soup and simmer them for 5 minutes, on low heat.
