But in Transylvania, we use Russet Potatoes, and they also come out just great, as with the others. So use whatever you have at home. It doesn't have to look perfect.

- Add an extra raw egg into the sour cream mixture to help bind the layers and top with a slightly custardy, golden finish after baking. Also helps the topping set beautifully and adds richness.

- Grated Cheese - Trappista, Edam, Mozzarella for a melty top. I recommend using as much as you can. For me, the mozzarella cheese is the secret ingredient. That makes this dish at the top for me.

How to Make the Rakott Krumpli
Boil Potatoes whole in salted water until just fork-tender (about 20 minutes). Drain, then cool slightly before slicing into ¼-inch rounds. Boil eggs.
Grate eggs and cheese: Use a grater to shred both eggs and cheese (if it's not yet grated). You can also slice the eggs if you prefer that way.
Make the mixture: Before assembling the layers, mix the sour cream, egg, and cream together.

Ok so…last wee I went to my Hungarian friends house and she was making this dish. I asked about the name, she said “rakott krumpli”. While I fell in love with her version, this one looks absolutely beautiful. I don’t think she used a lot of cheese, but I definitely will try this one.
