- two tablespoons of extra virgin olive oil

- Pour all the wet ingredients together – pineapple juice, lime juice, and white vinegar -, then add all the dry ingredients into the liquid mix. Salt, black pepper, white pepper powder, oregano, garlic powder, paprika powder, mild chili powder
- After cleaning and washing the chicken, dense the whole chicken into the prepared marinade and keep them in the refrigerator for at least 6 hours to soak all the ingredients in. You can leave it overnight if you can. More is better.
- Put in the oven for 1 hour, at 400°. Make sure you put aluminum foil on the top so it won’t burn the skin right away, and it cooks the chicken very well inside and out. For the last 30 minutes take off the aluminum foil, so it will give a nice golden brown color on the outside. Leave it on 350°. For the best result choose the cooking mode at Convection Roast.

Is it best to leave the chicken whole before baking? Have you tried the recipe with a chicken that is cut up prior to baking?

This is a whole chicken recipe, but you can also cut up your chicken prior to baking. But then, the baking time will be faster.

Hi Angie,
Depends a lot how many pounds the chicken has. But the approximate would be 375F for approx. 50 to 60 minutes with aluminum foil on the top, and an extra 20 minutes without aluminum foil, at 350F. Check if roasted evenly… if it needs more time, let it be on 350F and check on it every 5-10 minutes.
